Truffle Mac & Cheese

Ingredients
500 g pasta
60 g flour
60 g butter
1 liter milk
2 bay leaves
100 g cheddar cheese (grated)
100 g truffle cheese (grated) (substitute with Gouda)
⅓ cup truffle paste (optional)
3 tbsp truffle carpaccio (optional)
2 tsp Dijon mustard
Panko bread crumbs
3 tsp thyme
Salt and pepper to taste
Preparation
Boil the pasta according to package instructions.
Bring 1 liter of milk and 2 bay leaves to a simmer. Remove the leaves.
In a large pot melt the butter and add the flour. Whisk rigorously till a paste is made and slowly add in the warm milk.
Whisk till thickened and then add the cheese. Leave some cheese for the topping.
Add the Dijon mustard, truffle paste, and thyme.
Add the cooked pasta and mix till all the pasta is coated in the sauce.
Season with salt and pepper.
Transfer to a baking dish.
Top with more cheese and some panko breadcrumbs.
Bake in the oven at 350 for about 25 mins till golden at the top.
