Spaghetti w/ prawns and cherry tomatoes



Ingredients

  • 12 medium sized prawns w/ tail 

  • 1 cup cherry tomatoes (halved) 

  • 4-6 tbsp minced garlic 

  • 4 tbsp minced onion

  • 4 tbsp lemon juice (adjust to taste)

  • ¼ cup pasta water 

  • 2 cups baby spinach (optional) 

  • 250 g spaghetti 

  • Chilli flakes to taste 

  • Salt and pepper to taste 

  • Parmesan cheese and parsley to garnish

Preparation

  1. Cook the spaghetti according to package instructions and be sure to reserve the pasta water. 

  2. In a pan add some butter and olive oil. 

  3. Once melted add in the onions. 

  4. As the onions have softened and turned slightly brown at the edges, add the garlic. 

  5. Let it cook for a minute or 2 and then add the prawns, cherry tomatoes, salt, pepper and chilli flakes. 

  6. Once the prawns have changed color, add the lemon juice and pasta water. 

  7. Add baby spinach if using. 

  8. Add the cooked spaghetti.

  9. Toss till well combined.  

  10. Top with Parmesan cheese and parsley. 

  11. Enjoy!
