Thai Sweet Chilli Salmon

Ingredients

  • ½ cup Thai sweet chilli sauce 

  • 2 tbsp sambal oelek + 2 more 

  • 1 tbsp Dijon mustard 

  • ¼ cup water 

  • Salt 

  • Pepper 

  • 2 salmon fillets 

  • Rice 

  • 1 packet baby spinach 

  • 4 cloves garlic (chopped) 

  • Jasmine rice to serve 


  1. In a pan, add some olive oil and cook the garlic along with 2 tbsp sambal. 

  2. Season with salt. 

  3. Add the spinach and cook till it wilts down. 

  4. When the salmon is done, remove from the oven and remove the salmon from the skillet. 

  5. Place the skillet back on the stove and add ¼ cup water to the sauce and cook till it thickens. 

  6. Place the salmon on top of the rice and spinach and pour the sauce on top! 

  7. Enjoy!  Preparation

  8. Preheat your oven to a high temperature and set to broil. 

  9. Start by making your sauce. Mix together the Thai sweet chilli sauce, 2 tbsp sambal and the Dijon mustard. 

  10. Pat dry your salmon and season with salt and pepper. 

  11. On a stove, heat up a cast iron skillet and heat up the sauce.

  12. Add in the salmon skin side up and then place in the oven for 3-5 minutes. 

  13. Meanwhile, cook your spinach.
