Steak Burrito Bowls

Serves 4 people
Ingredients
Steak Rub
1 tsp chilli powder
1 tsp cumin powder
½ tsp dried oregano
½ tsp paprika
Salt and pepper to taste
3 tbsp olive oil
Corn Salsa
2 tsp butter
2 tbsp lemon juice
1 tsp chilli powder
2 tbsp chopped coriander
1 can kernel corn
Cilantro Lime Rice
2 cups brown or white rice
2 bay leaves
¼ - ½ cup chopped coriander or cilantro
4-6 tbsp lemon juice
Salt to taste
Bowl Toppings
Guacamole
Pico de Gallo
Sour cream
Mexican cheese blend or mozzarella cheese
Black beans
Lettuce In a saucepan, melt the butter and add the corn along with chilli powder, lemon juice and coriander.
Mix together till well combined and set aside.
Cilantro Lime Rice
Soak your rice.
In a large pot, boil some water.
Add salt and the bay leaves and the washed rice.
Cook according till ready.
Transfer to a large bowl, then add the lemon juice and cilantro.
Adjust the lemon according to taste.
Assembly
In a bowl, add the rice, then add the steak, then the black beans, then add the Pico de gallo, then sour cream, cheese and top it off with lettuce.
Enjoy!
Preparation
Steak
In a small bowl, mix all the ingredients for the spice rub except the olive oil.
Drizzle the steak with the olive oil, and cover the steak with the spice rub.
Heat a skillet with some olive oil and cook the steak to your liking. (I like medium to rare)
Once cooked, let it rest then chop it into bite sized pieces.
