Spicy Lobster Capellini

Ingredients

  • 1 large lobster (cut into small pieces) 

  • 6 cloves garlic (chopped) 

  • 1 small onion (chopped) 

  • 20 cherry tomatoes

  • 1-2 tbsp red chilli (chopped) OR 1 tbsp pili pili

  • Salt and pepper to taste 

  • Olive oil / butter 

  • 100 gr uncooked capellini or pasta of your choice 

  • ½ cup of pasta water 

  • 1-2 Tbsp lemon juice 

  • Basil and parsley to garnish 

Preparation

  1. Boil your pasta according to package instructions and save about ½ a cup of the water. 

  2. In a pan heat up oil and butter and start to cook the onion. 

  3. When it’s translucent add the garlic and fold together. 

  4. Add the cherry tomatoes, chilli, a little bit of pasta water (abt less than ¼ cup), salt and pepper. 

  5. Once the tomatoes have slightly softened add the lobster and cook till they’re ready.

  6. Add in the pasta and toss till combined. 

  7. If the pasta is a bit too dry you can add more pasta water. 

  8. Adjust the salt and pepper. 

  9. Serve with some basil and parsley!
