Spaghetti Aglio Olio e Peperoncino

Serves 1 person
Ingredients
100 grams dry spaghetti
40 ml olive oil
5 cloves garlic (sliced)
15 grams parsley
5-10 grams chili flakes
Salt
Preparation
In a large pot, boil some water and heavily season it with salt. It should taste like the ocean.
Cook the spaghetti 1-2 mins less than the package instructions.
In the meantime start to make the sauce for the pasta.
In a pan, heat up the oil on medium heat.
Start to fry the garlic and the chilli flakes. Keep a close eye on the garlic because you don’t want to burn them.
Add 1 ladle of the pasta water and mix so the sauce gets emulsified.
As soon as the pasta is cooked add in the pasta directly into the pan.
Add the parsley and 1 more ladle of the pasta water.
Toss till it’s all combined.
Garnish with some more parsley and chilli flakes! Enjoy!
