Smashed Potatoes



Ingredients

  • ½ kg baby potatoes

  • Sea salt

  • Pepper

  • 2 tbsp chopped garlic

  • 2 tbsp chopped parsley

  • 2 tbsp olive oil

Preparation

  1. In a large pot, boil some water with sea salt and add the potatoes.

  2. Once tender, remove them from the pot and transfer them to a lined baking sheet.

  3. Use a spatula or a glass to smash the potatoes. (Be sure to be gentle as. You don’t want to break the potatoes.

  4. Drizzle olive oil and sprinkle the salt, pepper, garlic and parsley and coat them well.

  5. Bake them in the oven at 350 for 15 minutes and then flip them and then bake them for another 15 minutes.

  6. Once golden, remove them from the oven and garnish with so,e fresh parsley.
