Shrimp Basil Fried Rice

Ingredients

  • 12 oz shrimp 

  • 1 cup Thai basil 

  • ¼ cup garlic cloves 

  • 4-6 Thai chilies 

  • 1 small onion sliced

  • 4 tbsp oyster sauce 

  • 2 tbsp fish sauce 

  • 1 tbsp palm sugar 

  • 2 eggs 

  • 2 ½ cup day old cooked jasmine rice 

  • 2 tbsp butter 

Preparation

  1. In a mortar and pestle, mash the garlic and red chilies till it becomes a paste

  2. In a small bowl, mix the oyster sauce, palm sugar and fish sauce

  3. In a wok or pan, heat up the butter and start to cook the shrimp. 

  4. When it starts to get a little pink, add the garlic and chilli mixture. 

  5. Give it a good mix then add the onions

  6. Move everything to the side of the pan and crack the eggs and scramble

  7. Once the eggs have cooked, mix it with the shrimp and add in the rice and oyster sauce mixture

  8. Add in the rice, then the oyster sauce mixture

  9. Mix well, then add in the thai basil. 

  10. Once combined, serve in a bowl and enjoy!
