Red Curry Laksa



Ingredients

  • 2 tbsp oil 

  • 300 gr protein of choice (prawn/boneless chicken cut into bite sized pieces) 

  • 2 tbsp red curry paste 

  • 2 tbsp curry powder (recipe in highlights) 

  • 3 Thai red chillies (chopped) 

  • 4 cups chicken stock 

  • 2 tbsp fish sauce 

  • 1 tbsp brown sugar 

  • 1 can coconut milk 

  • Salt to taste

  • 800 g noodles (egg noodles, vermicelli) 

  • Mushrooms (or other veggies of choice) 

  • Bean sprouts 

  • Boiled eggs

  • Lime juice 


  1. When the prawns change, color the broth is ready. 

  2. Prepare your noodles according to package instructions. 

  3. Assemble your laksa by place your noodles, then add your broth, bean sprouts, boiled egg and lime juice. 

  4. You can also top it up with sambal or chilli paste of your choice! 

  5. Enjoy! 


Preparation

  1. Heat up oil in a deep pan and add the red curry paste. Break it apart and then add the curry powder. If you’re using chicken add it now and cook till tender. 

  2. Add the chicken stock and coconut milk and bring to a slight boil. 

  3. If you’re using prawns, add them now along with the fish sauce, sugar, salt, red chillies  and mushrooms.
