Prawn Dumpling Soup

Ingredients
Dumplings
prawn wrappers (35-40)
300 grams prawns w/o tail (de shelled and deveined)
3 tbsp chicken stock
1 tsp cornflour
1 tsp salt
¼ tsp sugar
¼ tsp white pepper
1 tsp sesame oil
Soup (per person)
1 cup chicken stock
1 tsp chopped garlic
1 tsp chopped fried garlic
1 tsp chili oil (or more according to taste)
1 tbsp soy sauce
1 tbsp vinegar
½ tbsp spring onions (finely chopped)
½ tbsp coriander (finely chopped)
Pinch of salt and sugar
Take your dumpling wrapper and add the shrimp and fold together. You can either freeze them or boil them straight away. Boil until they come up.
Soup
In a bowl, add the ingredients and a few dumplings. Pour the chicken stock on top and serve immediately!

Chop ⅔ of the prawns really fine almost like a paste
Chop the rest slightly bigger
Add the chicken stock, salt, pepper, sugar, sesame oil and cornflour and mix well till all combined.
