Ingredients
1 small white fillet fish (red snapper, sea bass, halibut)
Corn flour
2 tbsp oil
2 tbsp chopped red chilli
1 tbsp palm sugar
2 tbsp tamarind concentrate or juice
2 tbsp fish sauce
1 wok filled with oil to fry
Spring onions and lemon slices for garnish
Preparation
Make the sauce by heating up oil in the sauce pan. Add the chopped chilies, palm sugar tamarind and fish sauce till it makes a nice sauce.
Coat the fish in corn flour and fry till golden brown. Put it on the side to rest for about 2-3 minutes and then pour the sauce over the fish and serve.
Top with some red chilies, lemon slices and spring onions for garnish!
