Persian Joojeh Kebab



Serves 4 people


Ingredients

Marinade

  • 1 kg chicken thighs 

  • 1 cup lemon juice 

  • ¼ cup olive oil 

  • 1 medium onion (quartered and layers separated)

  • 2 tsp paprika powder (or more according to taste) 

  • 1 tsp black pepper

  • 1 tsp salt 

  • 1-2 tbsp chilli flakes

  • ¾ tsp saffron dissolved in 3 tbsp water

  • ½ tsp sumac 

Sides

  • 4 medium tomatoes 

  • 2 cups basmati rice 

  • 2 tbsp vegetable oil 

  • Sumac powder 


  1. Skewer the chicken and onions together and keep the tomatoes on a separate skewer. 

  2. Save the marinate, and use a brush to baste them when cooking.

  3. BBQ the chicken and tomatos till a nice a char is formed on the chicken. 

  4. Serve with basmati rice, the grilled tomatos and sumac! 

  5. Enjoy! 


Preparation

  1. Add the onions, lemon juice and olive oil to a bowl and combine. 

  2. Then add the paprika, salt, pepper, chilli flakes, sumac and dissolved saffron.

  3. Mix well and then add the chicken. 

  4. Cover and let marinate in the fridge for 2 hours. 

  5. When ready to cool, heat up your bbq and prepare the skewers.
