Serves 4 people
Ingredients
Marinade
1 kg chicken thighs
1 cup lemon juice
¼ cup olive oil
1 medium onion (quartered and layers separated)
2 tsp paprika powder (or more according to taste)
1 tsp black pepper
1 tsp salt
1-2 tbsp chilli flakes
¾ tsp saffron dissolved in 3 tbsp water
½ tsp sumac
Sides
4 medium tomatoes
2 cups basmati rice
2 tbsp vegetable oil
Sumac powder
Skewer the chicken and onions together and keep the tomatoes on a separate skewer.
Save the marinate, and use a brush to baste them when cooking.
BBQ the chicken and tomatos till a nice a char is formed on the chicken.
Serve with basmati rice, the grilled tomatos and sumac!
Enjoy!
Preparation
Add the onions, lemon juice and olive oil to a bowl and combine.
Then add the paprika, salt, pepper, chilli flakes, sumac and dissolved saffron.
Mix well and then add the chicken.
Cover and let marinate in the fridge for 2 hours.
When ready to cool, heat up your bbq and prepare the skewers.
