Pad Thai

Ingredients
1 Packet Rice Stick Noodles
4 tbsp dark soy sauce
2-4 tbsp chilli flakes
2-3 cups bean sprouts
200 gram spring onion (cut into batons)
1 cup chopped roasted peanuts
4 eggs (whisked)
Choice of protein such as prawns, chicken, tofu etc (optional)
Lime to serve
Sauce
40 ml oil
25 gr chopped garlic
75 gr chopped shallot
115 gr tamarind juice
100 gr palm sugar or white sugar
75 gr fish sauce
50 ml water
Add the noodles, protein, soy sauce, chilli flakes and the pad Thai sauce. Mix untill combined. Move everything to the side of the pan and add your eggs. Let them set and then scramble them and mix them into the noodles. Add the crushed peanuts and the rest of the bean sprouts. Mix well.
Top with more peanuts, spring onions, chilli flakes and bean sprouts. Enjoy!
Preparation
Start by making the sauce. Heat up the oil in a pan and then add the garlic. Once they start to brown add the shallot and sauté for 2-3 mins. Then add the tamarind juice, palm sugar, fish sauce and water. Stir till the sauce thickens. Turn off the heat and set aside.
Soak your noodles according to package instructions.
Heat up a wok with some oil and cook your protein. Remove from the pan and add half the bean sprouts and spring onions.
