Oven Roasted Chicken

Ingredients
150 g butter (softened)
1 tbsp chopped rosemary
2 tbsp chopped parsley
2-3 tbsp chopped garlic
Sea salt and pepper to taste
1 whole chicken with skin (1 kg)
½ onion (quartered)
4 cloves garlic (whole, peeled)
3-4 lemon slices
Preparation
Preheat your oven to 350-370^F
Clean the chicken well and discard the insides.
In a mixing bowl, mix the butter, garlic, salt, pepper, garlic, parsley and rosemary till well combined.
Pat the chicken dry and rub the herb butter all over the chicken, including inside the skin and in the belly.
Stuff the belly with the onion, garlic cloves, and lemon slices.
Place the chicken in a baking dish and put it in the oven for about 1 hour.
Baste the chicken every 10 minutes and flip the chicken half way through.
Remove from the oven when the chicken is ready. Remember, the cooking time may vary depending on the size of the chicken and temperature of the oven.
Serve with roasted veggies and pour the leftover sauce on top of the chicken.
