Japanese Spinach Salad

Ingredients
2-3 cups spinach
1 tbsp salt
2 tbsp toasted sesame seeds
1 tbsp non alcoholic mirin or rice vinegar
2 tsp miso paste
1 tsp sugar
½ tsp soy sauce
Preparation
In a mortar, grind the sesame seeds till they are almost ground. (Don’t grind them too much)
In a bowl, add the sesame seeds, sugar, soy sauce, miso paste, and mirin and mix well till combined.
Bring a large pot of water to a boil with some salt,
Add the spinach and cook for 5 minutes.
Remove the spinach and place in a bowl of ice cold water.
Squeeze out all the water and chop the spinach into smaller pieces.
Mix the spinach in the sesame paste till all the spinach is coated.
