Greek Style Red Snapper w/ Quinoa Salad

Ingredients

Fish

  • ½ kg red snapper fillets

  • ¼ cup olive oil

  • 3 tbsp melted butter

  • 1 tsp paprika

  • ½ tsp coriander powder

  • 6 cloves garlic (sliced)

  • 2 tbsp lemon juice 

  • 3 tbsp capers

  • Lemon slices

  • Salt & pepper to taste

Quinoa

  • 1 ½ cup cooked quinoa

  • ¼ cup chopped cherry tomato

  • ¼ cup chopped red onion

  • ¼ cup chopped coriander

  • 2-3 tbsp olive oil

  • Lemon juice to taste

Preparation

  1. Pat the fish dry and place in a baking dish. 

  2. In a measuring cup, mix the butter and oil and pour over the fish. 

  3. Sprinkle salt, pepper, paprika, coriander, lemon juice, garlic, and capers.

  4. Place lemon slices on the fish.

  5. Bake in the oven @ 400 for 15-20 mins till flaky. 

  6. While the fish is cooking, prepare your quinoa.

  7. In a mixing bowl, mix the quinoa, onion, tomato, coriander, lemon juice and olive oil until well combined.

  8. Serve together with the fish.

  9. Enjoy.
