Greek Gyros

Serves 2
Ingredients
Chicken
500 g chicken thighs
2 tbsp Greek yoghurt
1 tbsp oregano
2 tbsp lemon juice
½ tbsp red wine vinegar
1 tsp salt
½ tsp black pepper
2 tbsp red chilli flakes
3 cloves garlic (chopped)
Pita bread
Tzatziki (already posted this recipe)
Tabouleh
Hot sauce of choice
Preparation
In a bowl, whisk together the Greek yoghurt, oregano, lemon juice, red wine vinegar, salt, pepper, garlic and chilli flakes.
Add the chicken in a ziploc bag, and pour the marinade over the chicken and keep it in the fridge for a minimum of 2 hours.
In the meantime, prepare the tzatziki and tabouleh
When ready to cook, heat up a grill pan with some olive oil.
Cook the chicken till done, set aside and cover with foil to rest.
Slice the chicken.
Prep the pita, spread the tzatziki, tabouleh and chicken.
Sprinkle your favourite hot sauce.
You can even toast it in a panini press for extra crispiness.
