Ingredients
Fish Marinade
800 g fish filet (½ inch thick pieces)
1 tsp garlic paste
1 egg white
1 tsp salt
½ tsp pepper
1 tbsp sesame oil
Batter (Make it just before frying)
6 tbsp flour
6 tbsp cornflour
1 tsp salt
3 tsp baking powder
½ - 1 cup of ICED cold water (depending on consistency)
Extra
Oil for frying
French Fries
Tartar Sauce (see recipe in highlights)
Heat up a wok with oil.
Test a little bit of batter to see if it’s hot enough, if it’s bubbling then the batter is ready to fry.
Dip the fish in the batter and coat it well.
Put the fish in oil and fry till they turn golden brown. (Don’t overcrowd the wok)
Enjoy with fries and tartar sauce!
Preparation
Marinate fish with the marinade ingredients and set aside. You can also do it earlier in the day and leave it in the fridge.
Make the batter just before frying.
In a bowl mix the flour, corn flour salt and baking powder.
Gradually add the ice cold water stirring fast till there are no clumps.
Keep adding water till the batter is nice and thick, you don’t want it to be too watery.
