Ingredients
2 pieces grilled chicken sliced (Mariated the way you like)
Guacamole
Chunky tomato salsa
Kernel can corn (drizzled with lemon juice and cilantro)
Black beans
Sour cream
Mozzarella cheese
Cilantro lime brown rice
Cilantro Lime Rice
½ cup brown rice (soaked)
1-2 bay leaves
¼ to ½ cup Cilantro (chopped)
2-3 tbsp Lemon Juice
Salt to taste
Preparation
First cook the brown rice with the bay leaves and salt.
Once ready, transfer to a bowl and add the cilantro, lemon juice and some salt (if needed).
Mix well and set aside.
Cook your chicken and slice them.
Prepare your guacamole and salsa.
Assembly
In a bowl, add some rice.
Add chicken, then beans, salsa, corn, and cheese.
Enjoy!
