Chili Beef

Ingredients
1 kg filet of beef (cut into long strips)
3 tsp corn flour
3 tbsp soy sauce
3 tbsp dark soy sauce
2 tbsp oyster sauce + 2 more
1 tsp sugar
2 tsp pepper
1 tsp salt
1 heaped tbsp chopped ginger
1 ½ heaped tbsp chopped garlic
1 green capsicum (finely sliced)
½ cup green chilly (w/o seeds and finely sliced)
Spring onions finely sliced for garnish
Preparation
Marinade the meat with soy sauce, corn flour and 2 tbsp oyster sauce and set aside.
The key is to massage the meat really well to make sure that the meat is nice and tender.
In a wok, heat up some oil and add garlic and ginger.
Once fragrant, add in the meat and cook till it’s 80% cooked.
Remove from the wok and set aside.
In the same wok, heat up a little more oil and start to fry the capsicum and the green chilly.
Add the meat back in and then add the oyster sauce and dark soy sauce.
Mix till well combined and the meat is completely coated with the sauce.
Garnish with sliced spring onions and enjoy!
