Aloo Pilao


Ingredients

  • ¾ cup oil 

  • 2 tbsp ghee

  • 1 small onion (finely chopped) 

  • 1 tbsp garlic paste 

  • 1 tbsp ginger paste 

  • 1 tbsp cumin seeds 

  • 1 bay leaf 

  • 3 cardamom 

  • 3 cloves

  • 1 cinnamon stick 

  • 1 ½ tbsp green chilli paste 

  • 1 tbsp Shan Yakhni Pilao Powder

  • 1-2 tbsp yoghurt

  • Salt to taste 

  • 2-3 potatoes (soaked, peeled and quartered)

  • 350 grams washed basmati rice












Preparation

  1. In a deep pot, heat up the oil and ghee. 

  2. Add the bay leaf, cinnamon stick, cardamom, cloves, and cumin seeds. 

  3. Stir for a minute and add the onion and cook till halfway browned, 

  4. Add the potatoes with ½ a cup of hot water and stir. 

  5. Let it cook for 5-10 minutes, then add the ginger, garlic, green chilli, yakhni powder, yoghurt and salt.

  6. Cover and cook till the potatoes are 85% done. 

  7. Once the potatoes are ready, add the washed rice with 1 ¾ - 2 cups hot water and mix together. Cover and cook till the water has evaporated.

  8. Cover the rice with newspaper or parchment paper and let it cook for another 10 minutes. 

  9. Fluff the rice with a fork and enjoy!
